First Year Seasonal

We had a great year as Seasonal Campers. Weren't sure we were going to like it, but I have to say, being 20 minutes from home we used the trailer alot more than we had in previous years. The campground in Southern Ontario was terrific. It had a heated pool (which closed today for the season, I thought that was kinda early) and a hot tub and had lots to do almost every weekend.
Just thought I would ask how everyone's summer went at their seasonal site.

Caramel Pecan Bars

Caramel Pecan Bars
Preparation time: 25 minutes
Baking time: 40 minutes
Makes: about 36 bars
Freezing: excellent
Ingredients
BASE
1 1/2 cups ROBIN HOOD® All Purpose Flour
3/4 cup brown sugar , packed
1/2 cup ROBIN HOOD® or OLD MILL® Oats
1/2 cup butter , cold
1 egg , beaten
3/4 cup pecans , chopped
TOPPING
1 can (300 mL) EAGLE BRAND® sweetened condensed milk
25 caramels , unwrapped
1/4 cup butter
Preparation
BASE
COMBINE flour, brown sugar and oats in large bowl. Cut in butter until crumbly.
STIR in egg and nuts. Mix well.
RESERVE 1 1/2 cups crumb mixture. Press remainder firmly on bottom of greased 13" X 9" cake pan.
BAKE at 350°F for 15 minutes.
TOPPING
HEAT sweetened condensed milk, caramels and butter in saucepan on low heat, stirring constantly until smoothly melted. Pour over crust. Sprinkle reserved crumbs evenly on top.
BAKE 20-25 minutes, or until golden and bubbly. Cool completely. Cut into bars.

Spicy Cheddar Shortbread

Spicy Cheddar Shortbread
Preparation time: 40 minutes
Baking time: 15-17 minutes
Makes: approximately 40 cookies
Freezing: excellent
Ingredients
3/4 cup butter , room temperature
1 1/2 cups ROBIN HOOD® All Purpose Flour
1/4 cup corn starch
1/2 tsp salt
1/2 tsp cayenne pepper
1/4 tsp pepper
2 cups cheddar cheese , grated
Preparation
Preheat oven to 350ºF. Grease baking sheets or line with parchment paper.
Beat butter until light and creamy. Add dry ingredients. Mix until well combined. Add cheddar cheese and mix at low speed until incorporated (do not over mix). Divide dough in half.
Roll out half the dough on lightly floured surface to ¼” thickness. Using a 1 ½”-2” cutter, cut out rounds and place 2” apart on prepared baking sheets. Gather up scraps and repeat with remaining dough.
Bake in preheated oven 15-17 minutes, or until golden.

Brownie Bites

Brownie Bites
Preparation time: 15 minutes
Baking time: 15 minutes
Makes: 18 brownie bites
Freezing: excellent
Ingredients
1/2 cup butter
4 oz semi-sweet or bittersweet chocolate (or a combination)
2 eggs
3/4 cup sugar
1/2 cup ROBIN HOOD® All Purpose Flour
1/4 cup cocoa powder
1/4 tsp salt
1 cup chocolate chips (semi-sweet, milk and white chocolate)
18 mini cupcake liners
Preparation
Preheat oven to 350ºF. Line mini muffin pans with paper liners.
Melt butter and chocolate. Reserve.
Beat eggs and sugar until creamy. Fold in melted butter and chocolate. Add flour and cocoa. Stir in chocolate chips.
Spoon batter into prepared muffins cups.
Bake in preheated oven for 15 minutes or just until the tops are firm to the touch.

Recipes for Tailgating

With the NFL season just around the corner does anyone have any great recipes that they would love to share. I have included one for BBQ'd Chicken Pizzas.
Now would be good time to say: Go Bills Go!!
Barbecued Chicken Pizzas
3 grilled boneless skinless chicken breasts
1 lb (500 g) pizza dough
1/3 cup (75 mL) barbecue sauce
2 cups (500 mL) shredded Monterey Jack cheese
1 sweet green pepper, cut into rings
1/2 tsp (2 mL) hot pepper flakes
1/2 tsp (2 mL) dried oregano
Preparation:
Cut chicken crosswise into slices; set aside.
On lightly floured surface, divide dough into quarters; shape each into disc. Roll out each into 8-inch (20 cm) oval. Place on greased grill over medium heat; close lid and grill, turning once, until crisp, about 7 minutes. Remove from grill.
Brush with half of the barbecue sauce. Sprinkle evenly with half of the cheese. Arrange chicken over top; drizzle with remaining barbecue sauce. Add green pepper; sprinkle with remaining cheese, hot pepper flakes and oregano.
Return to grill; close lid and grill until cheese is melted and bubbly and crust is golden, about 10 minutes.
You can vary the toppings to include a mix of sliced sweet peppers and thinly sliced red onion, jalapeño pepper and Cheddar cheese.

Cool, thanks so much for the recipes. I did have them with Ranch Dressing. I had never heard of them before, but they are tasty. You get the strangest looks when you tell people you tried them.

I know this sounds like a strange request, but I recently tried them at a french fries truck in Sarnia, Ontario and just loved them. I would love to try making them at home. Does anyone have a recipe for them. Thanks

Update on our Seasonal. We took it as of May 1, as I was out of vacation at work and we wanted to enjoy our trailer. It is about 20 minutes from home. We have used the trailer more now than ever. The park is really nice, very quiet and there is stuff to do most weekends (chilli cookoffs, Bingos, auctions, hayride for the kids etc). I'm really glad we did it.

The Walmart Super Centre in Sarnia is terrific. Not sure it's open at this time of year at 6:00 am but I know at 7 am it is. A really nice selection of everything. Would recommend it.

We just changed our mattress in our 2005 jayco jayflight. It had the usual lumpy matress. We bought a 6 inch high density foam mattress. We placed a egg carton style foam on top as well and it works great.

It is a very nice quiet and clean park that has spots for overnight and short term stays. Take a look at the website. The pool is great and they have activities throughout the year.

Pumpkin Crunch Mini Muffins

Pumpkin Crunch Mini Muffins
Preparation time: 10 minutes
Baking time: 15 minutes
Makes: 24 mini muffins
Freezing: excellent
These mini muffins pack a big punch of flavour!
Ingredients
1 3/4 cups ROBIN HOOD® All Purpose Flour
1/4 cup granulated sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/2 cup dried cranberries , optional
2/3 cup milk
1/2 cup canned pumpkin purée (not pie filling)
1/3 cup CRISCO® Vegetable Oil
1 egg
brown sugar
Preparation
PREHEAT oven to 400º F (200º C). Spray 24 mini muffin cups with vegetable spray.
COMBINE first 8 ingredients in large mixing bowl. In smaller bowl, combine milk, pumpkin, vegetable oil and egg.
ADD liquid ingredients to to dry ingredients, mixing only until moistened. Fill muffin cups. Sprinkle with brown sugar.
BAKE at 400º F (200º C) for 15 - 18 minutes, or until golden.

Frozen Chocolate Banana Pops

Something great for the kids during the summer
Frozen Chocolate Banana Pops
Prep Time: 30 mins
Cook Time: 0 mins
Makes: 16
1/2 cup Skippy Peanut Butter
1 cup semi-sweet chocolate chips
1/4 cup vegetable oil
8 large bananas
16 wooden sticks
coloured sprinkles
In small saucepan, combine peanut butter, chocolate chips and oil. Melt over low heat, stirring constantly until smooth. Pour into a tall glass.
Peel each banana and cut in half. Place a wooden stick in one end of each half.
Dip bananas in chocolate mixture. Spoon sprinkles over each coated banana. Place on waxed paper-lined tray.
Freeze for at least 6 hours or overnight. Store in freezer in airtight container for up to 1 month.
